Making these dairy-free ice cream bars was a fun after school activity with our daughter. We substituted the coconut nectar for rice malt syrup in Healthful Pursuit’s recipe.
We made the ice cream the first afternoon letting it set in the freezer until after school the next day. Our daughter was excited at making her own ice cream and seeing the process involved. The boys however didn’t understand why it wouldn’t be ready until the following day’s afternoon tea.
After making the chocolate coating I worked quickly to completely cover the ice cream bars. Our daughter was fascinated at how quickly the chocolate set on the ice cream (thanks to the magic ingredient of coconut oil).
These dairy-free ice bars were so delicious our youngest son cried when he realised he had eaten it all!
