Chocolate Snowballs

Batman was excited. Last night was his Little Kindy Christmas Party. He was looking forward to seeing his friends, Santa, and a clown. He sat waiting so patiently wearing his elf hat while he waited for his name to be called to receive a book from Santa.

 I was going to take along banana muffins to share but found choc date balls in the Paleo Cafe cookbook. They went with the Christmas Party theme and were fun and easy to make. The kids of course had to try one before we went to the party!

Ingredients
  1. 150g dates
  2. 75g almonds
  3. 150g pecans
  4. 2 tbsp cocoa powder
  5. 80g shredded coconut, for rolling
  6. 2 tbsp coconut milk
Instructions
  1. Place almonds and pecans into thermomix bowl and blitz 15 seconds / speed 10.
  2. Add dates, cocoa powder and coconut milk into bowl and mix for 30 seconds / speed 10.
  3. Form even-sized balls, then rolls in shredded coconut and place on a tray in the fridge for a couple of hours to set.
